One of our favorite, go-to energy snack is our "Energy cookie," or, as some call them, "Epic cookies." They are loaded with protein, fiber, and good fats. They are delicious and appropriate for a morning snack/breakfast, or as an afternoon snack when your blood sugar is low. We've made them with all different ingredients, but the following recipe is our favorite mix right now.
Epic energy cookies
(Adapted - loosely - from My New Roots)
2 Cups Gluten-free (if required) old fashioned rolled oats
1 1/4 cups Almond Flour (meal)
1 tsp baking powder
1 tsp baking soda
1 tsp sea salt (fine)
2 tsp ground cinnamon
1 can Great Northern Beans (or white kidney beans)
1 egg
1 Tbs chia seeds with 3 Tbs water
1/4 cup maple syrup (grade B)
1/4 cup coconut oil
1 tsp vanilla
2/3 cup chopped dates
2/3 cup dark chocolate chips (gluten free, if required)
2/3 cup sprouted pumpkin seeds
Preheat Oven to 350 degree F
Makes 18-24 cookies
Line a baking sheet with parchment paper
Combine dry ingredients in a large bowl, and stir completely. Combine wet ingredients in a blender and pour over dry ingredients. Mix with a spoon to combine. Add dates, chocolate chips, and pumpkin seeds - mix to combine. Using a large ice cream scoop, scoop out an even amount of batter and place on cookie sheet - flatten slightly.
Place in preheated oven for 18-23 minutes. We prefer ours to be on the "more done" side. Serve alone, or with homemade chia pudding (our next blog!!).
