Years ago we began a new diet regime for our son, Hayden. It was mainly a gluten-free/casein-free diet. We were hoping to see some behavioral changes, and maybe even physical changes. We noticed after changing to rice pasta from wheat pasta, Hayden's digestion improved dramatically - and his hyper behavior mellowed. We were ecstatic. He didn't start talking, and he was still Autistic, so we weren't under any illusion that the diet change would create miracles. However, the digestion change felt like a miracle to us. We continued with the rice pasta, rice on it's own, rice parmesan, and anything gluten-free/casein-free we could find.

Finally, after years of this, Robert brought home a box of Quinoa pasta - elbow noodles. I balked - especially since it wasn't my idea. I left the box in the cupboard, making excuses that I'd already prepared his usual meal of rice, fake parmesan, olive oil, and gluten-free soy sauce - plus, I really didn't think Hayden would like it. We'd already tried corn pasta, with some success, but decided not to put that in his diet too often, and also bean pasta, which tasted awful to Hayden. One day, there was no other option but the Quinoa pasta. So, the day had come to try quinoa pasta. Hayden LOVED it!!! I was amazed! It had a nice texture, taste and look. We had a new option!!

I then began cooking quinoa, and after many practice batches, to perfection. Hayden now has it as an option for his breakfasts, lunches and dinner. It can totally replace rice or pasta and have delicious results.

Robert wasn't satisfied. He felt that if quinoa was so good for us on the inside - why not the outside too?
